چکیده
Glycation between proteins and sugars via the Maillard reaction has been shown to improve heat stability of proteins. In this study, inulin, a healthy dietary fiber, was glycated with whey protein isolate (WPI), effects conditions were investigated. Conjugates prepared by freeze-drying mixed WPI inulin solutions at 1:1 6:1 WPI-to-inulin weight ratios followed dry heating 70, 75, or 80 °C for 12 72 h under uncontrolled, 44%, 80% relative humidity. Heat evaluated turbidity, particle size, rheological measurements. Degree glycation assessed quantifying loss amino groups formation Amadori compounds. Results showed that conjugation led improved stability, as decreased turbidity size well ability maintain viscosity compared control samples. Based on groups, optimum achieved WPI–inulin mixtures 2:1, 4:1, temperature without controlling The could be due an increase in negative charge increased structural stabilization Under limited degree glycation, conjugates have great potential utilized food ingredients, especially beverage industry.

The purposes of this study were to investigate the impacts of concentration levels of whey protein isolate (WPI) and inulin on the formation and physicochemical properties of WPI/inulin nano complexes and to evaluate their potential prebiotic effects. WPI/inulin nano complexes were produced using the internal gelation method. Transmission electron microscopy (TEM) and particle size analyzer wer...
متن کاملInteractions of whey proteins during heat treatment of oil-in-water emulsions formed with whey protein isolate and hydroxylated lecithin.
The interactions of proteins during the heat treatment of whey-protein-isolate (WPI)-based oil-in-water emulsions with and without added hydroxylated lecithin were studied by examining the changes in droplet size distribution and the quantity and type of adsorbed and unadsorbed proteins. Heat treatment at 90 degrees C of WPI emulsions resulted in an increase in total adsorbed protein; unadsorbe...
متن کاملProperties of Cast Films Made from Different Ratios of Whey Protein Isolate, Hydrolysed Whey Protein Isolate and Glycerol
Whey protein isolate (WPI)-based cast films are very brittle, due to several chain interactions caused by a large amount of different functional groups. In order to overcome film brittleness, plasticizers, like glycerol, are commonly used. As a result of adding plasticizers, the free volume between the polymer chains increases, leading to higher permeability values. The objective of this study ...
متن کاملCa2+-Induced Cold-Set Gelation of Whey Protein Isolate Fibrils
In this paper we describe the rheological behaviour of Ca2+-induced cold-set gels of whey protein mixtures. Coldset gels are important applications for products with a low thermal stability. In previous work [1], we determined the state diagram for whey protein mixtures that were heated for 10 h at pH 2 at 80°C. Under these conditions, the major whey protein, b-lactoglobulin (b-lg), forms fibri...
